Chicken Pizza with Buffalo Mozzarella
4 pita breads
200g free range chicken mince
Olive Oil to drizzle
2 tsp spice mix (hot chili powder, salt, paprika, ginger and coriander)
fresh oregano leaves
100g Italian buffalo mozzarella
fresh mint leaves
fresh basil leaves
salt and pepper to taste
Preheat the oven to 180C.
Drizzle the pita bread with olive oil and season with salt and freshly ground black pepper. Thinly slice the courgettes and fan it over the pitas from outside in.
In a bowl, mix the chicken mince with the spices + the fresh oregano. Spread evenly over the courgette.
Place the pita on an oven tray and cook in the oven for 8-10 minutes or until the chicken is just cooked. Remove from the oven and leave to cool for 5 minutes before topping with the buffalo mozzarella, fresh mint and basil.
Drizzle with a little olive oil and season to taste. Cut into slices to serve.
