Apple and Walnut Cake
Prep time: 20 mins | Baking time: 35 mins | Serves: 12
1/2 c chopped walnuts
1 apple, unpeeled and diced
1 tsp cinnamon
2/3 c non-dairy milk (divided)
1/3 c pure maple syrup
1 ½ c wholemeal flour or GF (gluten free) flour blend
1 Tbsp baking powder
1/2 tsp salt
3/4 c apple sauce, unsweetened
1/3 c honey
1 Tbsp vanilla extract
Preheat oven to 175 degrees C. Lightly grease a 20cm round cake pan, or Bundt pan if using GF flour.
Sprinkle the walnuts in the bottom of the pan, followed by the diced apple and cinnamon.
In a small bowl, combine the 1/3 cup non-dairy milk with maple syrup. Pour over the pecans and apple.
In another bowl, stir together flour, baking powder, salt, apple sauce, honey, vanilla and remaining milk to form a batter.
Spread this batter evenly over the pecans and apples.
Bake for 30 minutes or until a toothpick comes out clean.
Cool in pan, then hold serving plate on top of cake and flip over to serve.
